Day 3: The holiday baking bonanza

Sunday was all about putting the finishing touches on the fruits of my labor. Here’s the mint brownie brigade, created in the final hours of a three-day baking bonanza. Each little brownie bite stands tall and proud (well, save for some underachievers in the back), like a little soldier marching in his rank. To the gift boxes!

The do-over batch of caramels were finally wrapped…

… and the rainbow cookies were lookin’ festive despite my laziness in layering on the chocolate. With my baking bonanza now over, I sat back with a glass of Beaujolais and would truck the boxes to the post office in the morning. Merry Christmas!

As a lucky recipient of said gift box, I eagerly report:
Caramels kept their nice sheen and candy shapes after being mailed cross country. Texture was perfect balance of firm and chewy, but not sticky. Very dark and buttery like a Life Savers Butter Rum. Most delicious to me, but the kicker was when my cat turned on the empty open wrappers left on the table to lick them repeatedly…
Italian cookies were delicious and similar to the mint brownies or “grasshoppers” which were extraordinary! My husband and I enjoyed every tasty bite. Like a rich creamy brownie with addictive Andes mint-like flavor. I recommend any foodie try these for themself.
Rainbow cookies have the most delightful texture and Marzipan taste. Plus they’re very beautiful as you can see.
My hat is off to the Chef/Author/Bloginatrix!

I only got one teensy weensy bite of the rainbow cookies….When I returned home from shopping, the bag was empty. (Marvin)
Moral of the story: Do not leave these cookies unattended. They will be eaten by someone else.

I LOVED THE rainbow cookies! Steve never got any!! I ate them all in one sitting – I felt so selfish, but it felt so good…..
I’d like another order, please…..;)
And, i agree with Tracy – Steve said the same thing! The grasshoppers tasted just like Andes mints! He loved them, but the caramels were his favorite!!!!
